Our “Go-To” Soup Recipe for National Soup Month

Brrrrrrr, its cold outside! And there’s nothing more comforting than a homemade bowl of soup. We make Zucchini Tarragon soup at least once a month at our house. It’s absolutely delicious and only requires 3 ingredients. (Recipe courtesy of our dear friend Ruben.)BPFK_zucchini soup ingredients

Step 1: Chop zucchinis.


Step 2: Place zucchini in soup pot. Add vegetable or chicken broth to the top of the zucchini. Then add dried tarragon.


Step 3: Cover pot and cook on medium heat for about 20-30 minutes or until zucchini starts to become translucent.

Step 4: Blend small batches of cooked zucchini with a tiny bit of broth. Be sure to only fill blender halfway or less (otherwise you’ll have a giant mess and no one wants that). Return blended mixture into soup pot. Repeat.

Optional: Salt and pepper.
